Lunch box Round Up #4

Here are the lunches from the 2nd back-to-school week!


Quinoa & Rice Balls w/cheesy center, & a squirt of Braggs,
edamame, raspberry-banana puree cups, salad, dressing, tortilla strips


The raspberry-banana puree cups may look like some kind of sugary sherbet, but it is literally just raspberries and bananas....pureed! It melts into a cool and refreshing smoothie-like consistency by lunch time. (Shhh..... don't tell the kids it's actually homemade baby food! :O) I just poured the blended puree into a mini muffin pan,* allowed them to freeze overnight, then transferred them to a freezer bag, and stored in the freezer, of course! It actually tastes a lot like sherbet. My kids love that they're allowed to have these when they ask for a snack and I say "Choose something healthy." I discovered this yummy recipe on weelicious.com.

*I used my mini muffin pan because it happens to be one of those silicone ones, making it easy to pop out the frozen fruit chunks, but you could also use an ice cube tray or silicone cupcake liners in a regular-sized muffin pan.

Buffalo Chicken Bites, ranch dip, watermelon, homemade chocolate chip cookies


 I just tried these Buffalo Chicken Bites for the first time this week. I cooked them for dinner and saved enough for everyone to have for lunch the next day. They are so yummy! Thank you, Nikki at Pennies on a Platter for the recipe! I fell in love with the photo while browsing Pinterest.

Here is one of the lunches I packed for Mr. Right, using last night's leftovers:

Stuffed Zucchini Cups, Annie's Organic White Shells & Cheddar,
 cucumbers, trail mix


The cucumbers and trail mix can easily be removed to heat up the remaining food. Mr. Right loves Easy Lunch Boxes too! ;) I just made these Stuffed Zucchini cups for the first time this week.     Oh, how exciting! Thank you so much! I'll stop by your blog on Friday to check it out! :D

    I started introducing a wide variety of foods to my kids when they were very young. One was very open (my son) & liked EVERYTHING.... my daughter was somewhat picky, but still liked a lot of healthy things. They are 15 & 11 now & their tastes have changed a lot. She likes lots of new things, & he's found things he doesn't care for much. Just keep offering different foods & you'll be surprised what they end up liking. It can be a long process, but just hang in there! ;)

  6. loving your ideas...I'm new to packing a lunch for school. I bought the easylunchboxes, and have a few questions.
    do you pack at night? and do the crackers and stuff get soggy in the container and then in the fridge?
    When you send pasta and quesadillas do your kids eat it cold?
    any help would be appreciated.

  8. Corey, Thank you & I'm glad you're enjoying the lunchbox ideas! To answer your questions...

    I typically pack the lunches in the morning, unless I'm using leftovers from dinner, then I pack those right into the containers for the next day.
    I usually have my menu for the week planned out so I just have to check to see what to pack. (no brain work in the early a.m.)
    My kids almost always eat their food cold, even though they have full access to microwaves at school. They just don't want to lose any of their social time, and they say they like the food the same either way. Whenever I pack cooked foods, they're always cooked ahead of time and chilled overnight. I keep the lunchboxes cool so the food stays at a safe temp.
    Also, one more tip. Whenever you're chopping veggies for dinner, or slicing a block of cheese, etc. prepare a little extra to set aside for lunches.

    I adapted the recipe found here. http://weelicious.com/2010/02/08/rice-cheese-treasures/

    I substituted Quinoa for 1/3 of the rice, and added nearly a 1/2 cup of extra water to the pot. This makes the rice sticky so you can form the balls. Just make sure your hands are damp so the rice won't stick to them. These are very good with Bragg's Amino Acids or soy sauce. The cheesy center is a nice surprise. I wrote on the kids' napkins to nuke these for about 30 seconds for a nice surprise. They loved it. ;)

    P.S. Make sure the rice cools COMPLETELY before doing the balls. I know this from experience. ;)

    Also, I forgot to add...

    If you're packing crackers, bread, etc. in the morning, you shouldn't have a problem with soggy-ness when it's lunch time. I haven't ever packed these kinds of items overnight, so I can't say for sure what would happen.
